COOKIE DOUGH TO GO
When I was little one of my sister and I loved to bake cookies! I can still hear the sound of my mom yelling at us to “to get our fingers out of the cookies dough!” but I just couldn’t help myself.
I think cookie dough is probably the only thing on this planet better than actual cookies! Even now as a grown women I still find my fingers in the bowl every time I bake. It’s a bit of an addiction.
Since I am one step below becoming the cookie monster I needed to find a way enjoy cookie dough more often, without all the guilt, gut rot, and work of actually making cookies.
And Cookie Dough to Go was born!
Cookie Dough to Go is a fast, delicious, and satisfying alternative to cookie dough that is vegan and has health benefits making it a great snack.
The Benefits of Cookie Dough to Go.
Part of the reason this Cookie Dough is so much better for you is because we are replacing flour with a chickpeas.
Chickpeas are an amazing source of carbs (which is needed to provide your body with energy)!
They are also very high in protein and dietary fiber, well also providing iron, magnesium, folate, and more!
The other ingredient making this delicious snack so good for you is the coconut oil. Coconut oil is a healthy fat source and it makes this cookie dough filling well also contributing to brain health, healthy (HDL) cholesterol, and fat burning.
In addition to all that coconut oil is an anti-bacterial and can help clear out pathogens.
Now that you know how healthy this snack is let’s get on to making some.
· 2 c of rinsed chickpeas (approx. one 550ml can)
· 2 tbls maple syrup
· 2 tbls coconut oil
· 1 tsp water
· ½ c dark chocolate
Rise your chickpeas and blend them in a food processor with water, coconut oil, maple syrup, and salt. If it is too thick simply add some more water. It should be a little creamer then normal cookie dough.
Slowly stir in the coconut flour until your mixture is the consistency of cookie dough! Add your chocolate chips and enjoy!
