HEALTHIFIED APPLE CRISP

          Lately, I’ve been CRAVING apple crisp but I haven’t been able to find a recipe I could get behind.

That’s why I just created my own that’s super easy to make! I’ll make a big batch on Sundays and eat it in the mornings before I go to work.

YES I eat apple crisp for breakfast but it’s extremely healthy and filling!

You can definitely eat this in the morning because this recipe is:

·         Easy digestible
·         High protein
·         Free of processed sugars
·         Gluten free
·         High fiber
·         Vegan
·         Free of processed ingredients
·        DELICIOUS


  


RECIPE

Note: To aid digestion this recipe uses soaked oats, nuts, and seeds. To read about how to soak and the importance of it check out this ARTICLE.

Ingredients

Base:
·         5-6 apples
·         ¼ c maple syrup
·         ½ tsp coconut oil
·         ½ tsp natural vanilla or ¼ tsp vanilla bean paste
·         1 tsp apple cider vinegar
·         ½ tsp cinnamon (I always use Cha’s cinnamon, I don’t have a discount but I highly recommend it!)
·         Dash of nutmeg and salt.  

Step one: Chop up your apples (make sure they are thin so they don’t stay hard)

Step two: In a large bowl mix all the ingredients together and set aside.

Step three: Start making the top/crumble

Top:

  •        ½ c soaked oats (drained)
  •         ½ c soaked walnuts and/or pecans
  •          ¼ c soaked chia (I used Avazera discount code barb10 for 10% off)
  •          1/3 c coconut flour ( or flour of choice)
  •          2 tbls coconut oil
  •          ½ tsp cinnamon
  •          Dash of nutmeg and sea salt

Step one:  Drain the oats and nuts.

Step two: In a large bowl mix the drained oats and nuts with chia paste, coconut oil, flour, and spices. Mix thoroughly.

Step three: Mix one-third of this mixture in with the base.

Step four: Grease a baking dish (3 to 4 inches thick at least).

Step five: Pour the base into the baking dish then evenly pour the crumble topping over top!

Step five: Bake on 350 for 30-40 minutes. (Your apple filling may bubble over depending on the pan so it’s good to put a cookie sheet under the pan)


Step six: Add some yogurt or ice-cream and enjoy!
